Tomatillos are a force of a nature. They grow like weeds into lush plants the size of small trees and yield huge quantities of fruit that, in the rights hands, can be turned into spectacularly delicious sauces and salsas. They self-sow readily, tolerate too much water and too little, and attract the eye with their shiny leaves and ornament-like husked fruit. The purple hue of this variety makes for a show-stopping salsa. Overloaded with fruit? Remove the husks, place in zippered plastic bags, and store in the fridge--they'll last several weeks.

How to grow: Start 4-6 weeks before last frost, then transplant after frost. Can be staked to make them easier to handle and take up less space in the garden. A simple 4' wooden stake or 4' section of ½" conduit per plant will suffice. Harvest fruits when they have started to fill out the husk. To use, remove the husks and rinse before proceeding with recipe.
About the artist: Lillian Edwards studied fine art and environmental studies at UC Santa Barbara. She currently lives and works at an organic, educational farm called Fairview Gardens, where she illustrates informational signage for the farm, harvests veggies for the community, leads young ones on adventures during farm camp, and works at the farm stand and farmers markets. Lillian love plants, believes that food is medicine, and enjoys sharing meals with loved ones.
