In the north east, the first spring radishes mark the gateway of fresh eating. Though a few spring greens and herbs often precede them, the act of pulling the first fresh root out of the ground sends the heart aflutter. How to grow: Direct sow as soon as soil can be worked, through mid-spring. Thin small radish seedlings to 2-4" apart. Keep watered, especially as the season warms up. Harvest radishes as soon as they are round. Store radishes without the top to keep roots firm. (Tops are enjoyable in a sauté or braising mix.) Plant in succession to have a steady crop. Sow in late summer for a spectacular fall crop.
